Homemade Caramel Corn Recipe

Pop the caramel corn you made at home into your mouth while watching movies, hosting parties or any other time you desire something crispy and sugary!

Ingredients:

  • • 1/2 cup popcorn kernels
  • • 1 cup unsalted butter
  • • 2 cups brown sugar
  • • 1/2 cup light corn syrup
  • • 1 teaspoon salt
  • • 1/2 teaspoon baking soda
  • • 1 teaspoon vanilla extract

Instructions:

Pop the Popcorn:

Using your preferred method pop the popcorn kernels until you have about 10-12 cups of popped popcorn and set aside in a large mixing bowl.

Prepare the Caramel Sauce:

In a medium sauce pan, melt the butter over medium heat.

Stir in brown sugar, corn syrup and salt. Cook while stirring constantly until mixture comes to a gentle boil.

Allow mixture to come to a boil without stirring for 4-5 minutes or until it reaches a temperature of 250°F (120°C) on candy thermometer.

Then remove sauce pan from heat and quickly stir in baking soda and vanilla extract. Careful as mixture will bubble up.

Coat the Popcorn:

Pour caramel sauce over popped popcorn, gently stirring with spatula or wooden spoon to evenly coat popcorn.

Baking Caramel Corn:

Begin by preheating your oven to 250°F (120°C).

Once you have lined a large baking sheet with parchment paper or a silicone baking mat, spread the coated popcorn over them.

Ensure that you stir it every 15 minutes so as to coat evenly and prevent any burning for 45-60 minutes.

Cool and Enjoy:

When the caramel corn is done being baked, take it out of the oven and let it cool completely on the baking sheet.

Then, break up into pieces and store in an airtight container for two weeks.
