This Mexican Cornbread is seriously the BEST I’ve ever had! Packed with cheese, onions, and just the right amount of spice, it’s a game-changer for any meal.
Ingredients:
1 cup self-rising yellow cornmeal
1/2 cup oil
1 cup milk
3 eggs
1 cup shredded cheddar cheese
1 cup chopped onion
1/2 tsp ground red pepper
1 can cream-style corn (optional for extra moisture)
1/2 pound ground beef or sausage, cooked and drained (optional for a heartier cornbread)
Instructions:
Preheat oven to 400°F (200°C). Grease a cast-iron skillet or baking dish.
Mix cornmeal, oil, milk, and eggs in a large bowl until smooth.
Stir in cheddar cheese, chopped onion, and ground red pepper. Add cream-style corn and cooked meat if using, for extra flavor and texture.
Pour the batter into the prepared skillet or dish.
Bake for 30-35 minutes, until golden brown and a toothpick comes out clean.
